Savory Sweet Potatoes
While sweet potatoes are a holiday favorite, this dish is anything but expected.
2 lbs sweet potatoes, peeled and cut into wedges
1 tablespoon olive oil
2 tablespoons maple syrup
1 tablespoon butter
1 tablespoon lemon juice
1/2 teaspoon cinnamon
1/4 teaspoon sea salt
1 tablespoon parsley
Prep Time - 15 minutes
Cook Time - 50 minutes
Preheat oven to 400 degrees.
Toss sweet potatoes with olive oil and spread in roasting pan.
Roast until just tender, about 40 minutes, turning once with a spatula after 20 minutes.
Melt together remaining ingredients and pour over potatoes in pan.
Return to oven for an additional 5 to 10 minutes, until nicely glazed.
Apple Cranberry Cobbler
Simple and sweet, this large recipe can serve a crowd. Your family and/or guests will love the seasonal spices and the comfort of this belly-warming dessert.
Prep Time - 30 minutes
Cook Time - 45-60 minutes
Servings - 18
DIRECTIONS: Preheat oven to 375 degrees.
Toss apples and cranberries together in a 9x13-inch glass baking dish.
In a medium-sized mixing bowl, using a pastry cutter or two knives, blend together to resemble a coarse meal: salted butter, sugar, quick rolled oats, flour, baking powder, vanilla extract, spices, and sea salt.
Stir in maple syrup and milk. The topping mixture will become somewhat sticky. Drop the cobbler mixture by the spoonfuls onto the apple/cranberry compote and pat down slightly. Sprinkle with sugar, if desired. Bake for 45 to 60 minutes, or until apples are soft and topping has become golden.
Whip cream with cinnamon, vanilla, and sugar until stiff. Serve atop warm cobbler and melt into the "comfort zone."
Use Granny Smith, Cortland, or your family's favorite heirloom variety.
Apples and cranberries can be prepared up to 2 days in advance. Sprinkle with lemon juice, and store in an airtight container in the refrigerator.

2 gallons apple cider
2 cups fresh orange juice
1 cup lemon juice
1 cup pineapple juice
1 cup white sugar
1 teaspoon whole cloves
1 cinnamon stick, broken into pieces
1. Mix apple cider, orange juice, lemon juice, pineapple juice, and sugar together in a large pot over medium-low heat.
2. Place cloves and cinnamon in a tea ball; add ball to the apple cider mixture. Simmer mixture until warmed through, about 15 minutes. Serve from pot with large ladle.
Pumpkin Pie Parfait
This creamy concoction is a proven winner. No need to spend hours in the kitchen to impress a crowd — this dessert is a cinch to make and yummy to boot.
2 cans (15 ounces each) pumpkin puree
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1 1/2 teaspoon vanilla extract
3 tablespoons 2% milk
1/4 cup sugar
38 ounces (one 32-ounce container plus one 6-ounce container) lowfat vanilla yogurt
1 1/2 cups granola with raisins
Prep Time: 10 minutes
In a bowl, stir together pumpkin, cinnamon, nutmeg, vanilla, milk, and sugar. In 12 small bowls or ramekins (or one large trifle dish), layer the pumpkin mixture and yogurt. Sprinkle with granola.
Instead of making individual portions, layer in a trifle dish.

3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup firmly packed brown sugar
1/3 cup superfine sugar
3/4 cup rolled oats
3/4 cup dried cranberries
3/4 cup white chocolate chips
1/2 cup butter, melted and cooled
1 egg, lightly beaten
1 teaspoon vanilla extract
1. Sift flour, baking powder, baking soda, and salt into a bowl; pour flour mixture into a 4-cup glass jar. Layer brown sugar and superfine sugar in the jar, pressing firmly between each layer. Layer oats, cranberries, and chocolate chips. Seal jar.
2. To make cookies: Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
3. Empty dry cookie mix in large bowl. Stir in butter, egg, and vanilla extract until combined. Roll the dough into tablespoon-sized balls and place 2 inches apart onto prepared baking sheets.
4. Bake in preheated oven until lightly browned, 10 to 15 minutes. Cool on the sheets for 10 minutes before removing to cool completely on a wire rack.
